Most people assume plastic harbors less bacteria than wood.  But, according to a study done by the UC-Davis Food Safety Laboratory, this is far from the case.  The results of the study found plastic was impossible to clean and disinfect, whereas wood would end up disinfecting itself overtime.  And contrary to plastic, they also found that bacteria in wood does not multiply.  Therefore, we can assume that wood is safer to use than plastic.  The other upside to wood is, it is easier on your knives and will keep them sharper for longer.

There is also the option of an end grain cutting board.  These boards are essentially a puzzle of different pieces of lumber pieced together.  End grain cutting boards are also made so the grain of the wood is turned up as opposed to laying on its side.  Therefore, when you’re cutting, the knife will hit between the wood fibers and is less likely to severe the wood.  This makes it easier on the board and on your knife.   

But, what about bamboo?  Bamboo is loved for its sustainability and renewability.  These types of cutting boards are believed to be as sanitary, if not more sanitary, as wood.  And this is because they are less porous and absorb less liquid.  However, it also means they are tougher on your knives.
